The four hazards most likely to injure, harm, sicken, maim, or kill customers, employees, vendors, and others in any restaurant:

#1 – Ignorance: Those in Charge Don’t Know
#2 – Apathy: Those in Charge Don’t Care
#3 – Laziness: Those in Charge Don’t Act
#4 – Lackadaisicalness: Those in Charge are Asleep at the Wheel

After an entire career, spanning several decades, and dealing with a potpourri of incidents, accidents, mishaps, and catastrophic events that led to a shocking number of people being injured, harmed, maimed, raped, or killed in an extraordinary number of different ways in America’s restaurants and bars, I have determined that management, or lack thereof, is often to blame. If something bad happens in a restaurant or bar one or more of these four hazards will likely be a major contributing factor.

If you are dealing with the CEO or COO, the Vice-President or Director of Operations, a Risk Management or Human Resources leader, or some other person sitting at the corporate office with a fancy title and a decent paycheck, that has been given direct or indirect responsibilities pertaining to safety, security, risk and oversight of a restaurant, bar, or group of restaurants or bars, everyone will want to know what roles and responsibilities that he or she bears.

People who are multi-unit managers, district managers, general managers, or, for that matter, shift supervisors, kitchen managers, team leaders, or trainers at the unit, or multi-unit levels, will have the light brightly shining on them as well.

Anyone with any roles, responsibilities, or authority, of any type or kind, will be looked at and their words and actions will be scrutinized.

I think that we can all agree that no one wants or needs any of that hassle, so restaurants are best off getting their management moving forward so that they can get trained and educated, engaged, and active, and so that they can do the same for the employees that work for and rely on them. The key is knowing how to recognize and resolve the hazards before something bad happens. That makes sense, right?

Like I have said a thousand times before, it all starts with the training and education of the managers and then the managers sharing their training and education with all the employees.
